About five years ago, I changed my eating habits, and moved towards a vegan/vegetarian diet. The prepackaged diet foods I tried all had a common theme. however: ‘Low in fat, but high in sodium.' Foods high in sodium just caused me to gain weight since I had to drink water to get rid of the salty taste in my mouth, and that ended up stretching my stomach.
I created my recipes using simple ingredients, including fresh vegetables, and tofu. Eating my own healthy creations made the weight fall off of me, and clothes I hadn't worn since college fit again! I told my weight loss story by posting pictures of my meals on social media. My friends loved what they saw and wanted the recipes. Ultimately, I wrote and photographed a different sort of recipe collection with step-by-step instructions for each dish:
